Pork Chow Mein | |
1 lb boneless pork loin 2 cloves garlic, minced 4 Tbs soy sauce, divided 3 cups chicken broth 5 Tbs corn starch ½ tsp ginger 1 Tbs olive oil | 1 ½ cups thinly sliced carrots 1 cup thinly sliced celery 1 cup chopped onions 1 cup chopped cabbage 1 cup chopped fresh spinach Hot, cooked rice |
Cut pork into bite sized pieces. (Smaller stretches the meat.) Combine chicken broth, 2 Tbs soy sauce, and ginger in a bowl. In a wok or large frying pan, heat oil, add garlic and remaining soy sauce and then stir fry pork. Remove pork leaving the drippings and keep warm. Add vegetables except for cabbage and spinach to wok and stir fry 2-3 minutes. Add cabbage and spinach and stir fry 2-3 minutes more. Stir broth mixture and add to the wok along with the pork. Cook until desired thickness. Serve over hot rice. | |
This was very popular and there were no leftovers! I did not add the cabbage or spinach as I've yet to get to the store due to SNOW. I added 2 cups of corn instead and it was delish.
